This wine started as a university dissertation that was nearly failed. The professors called the winemaker’s cool-climate theories "unrealistic," but revenge is a dish best served chilled. The name Thesis is a cheeky "I told you so" to the academics who said it couldn’t be done. ​ Wood You Believe It? ​ This wasn’t just thrown in a barrel with a "hope for the best" attitude. It underwent a rigorous oaking programme in French barriques, using 30% new oak to add a glow of toasted brioche. Ten months of obsessive stirring of the lees (_battonage_) created a texture so silky it’s practically a liquid cashmere jumper. ​ On the nose, expect a punchy mix of Meyer lemon and white peach with a hint of flinty smoke. The first sip is all about vibrant nectarine and crisp green apple, quickly followed by a cheeky wink of crème brûlée and vanilla bean. It’s elegant, slightly buttery, and dangerously drinkable. ​ This is the ultimate "grown-up" Chardonnay that hasn't lost its sense of humour. It’s complex enough for the wine snobs but bright enough for a sunny Friday afternoon in the garden. Bold, balanced, and just a little bit defiant.
